Carrot, orange and cilantro soup ingredients

  • 1 t Vegatable oil
  • 1 lb Carrots, sliced
  • 6 oz Onion, chopped
  • 2 med Oranges, grated & squeezed
  • 372529⁄-2009260032 pt Vegetable stock
  • 2 T Cilantro, chopped
  • 1 t Salt
  • pepper, to taste

Cooking Carrot, orange and cilantro soup

1. Heat oil in a soup pot. Add the carrot & onion.
2. Cover & saute for 10 minutes, without browning.
3. Shake the pot occasionally.
4. Add the orange zest & orange juice, stock, cilantro & the rest of the seasonings.
5. Bring to a boil, cover & simmer for 45 minutes.
6. Set aside to cool slightly.
7. Pour soup into a blender & puree until smooth.
8. Return to pan & re-heat.
9. Serve hot.
