- 4 Shallots, finely chopped
- 4 large Mushrooms, sliced

- 1⁄3 c Dry white wine
- 2⁄3 c chicken broth
- 2 Egg yolks
- 1⁄2 c Whipping cream
- 1⁄3 c Pistachio Nuts, Chopped
- 1⁄4 t Dried tarragon
- 1 T Lemon juice
