Carnitas #1 (little meat cubes) ingredients
- 2 lb Lean pork
- Salt and pepper to taste
- A dusting of pasilla pepper
- -ground
Cooking Carnitas #1 (little meat cubes)
1. Cut the pork into 1" cubes.
2. Dusti with salt, pepper, and pasilla pepper, and let rest for 1 hour.
3. Place the meat in a shallow baking pan in a 300°F oven for about 2 hours.
4. Pour or siphon off the fat from time to time.
5. Drain on paper towels and serve with salsa cruda and/or guacamole.
6. Makes 25 to 30 carnitas.
