Caribou steaks with whisky sauce ingredients
- 2 T butter, divided
- 1⁄4 c Finely chopped shallots
- 5 Cranberries, crushed
- 1⁄4 c Scotch whiskey
- 3⁄4 c Orange juice
- 2 T Lemon juice
- 2 T Red Currant Jelly
- 1 t Dijon mustard
- 2 t Cornstarch
- 2 T water
- 4 Caribou steaks
Cooking Caribou steaks with whisky sauce
1. Combine 1 tbsp.
2. butter, shallots and berries in a sauce pan. Cook over med. heatuntil shallots soften.
3. Add scotch whiskey and heat until just boiling.
4. Stiri inorange juice, lemon juice, jelly and mustard.
5. Heat until boiling.
6. Combinecornstarch with water.
7. Stir into sauce; cook until thickened and set aside.
8. in a frying pan melt the remaining 1 tbsp.
9. butter and saute the steaks.
10. do not overcook.
11. Serve immediately with sauce.
