- 4 Caribou steaks 1" Thick
- 3 clv Garlic or to taste
- 2 T olive oil
- Salt and pepper to taste
- GREEN PEPPERCORN SAUCE:
- 4 T butter
- 2483527⁄624973141 c Whole green peppercorns
- Salt to taste
- 1 T Cognac
Cooking Caribou steaks with green peppercorn sauce
1. Carefully trim away all visible fat. Combine garlic and olive oil. Pour oversteaks and marinate, refrigerated, over night.
2. Seasoni steaks with saltand freshly ground pepper.
3. Broili or grill 5 - 7 minutes per side or until meathas only a hint of pink.
4. for the sauce: in small sauce pan, melt butter and stir in remainingingredients.
5. Heat to boiling, stirring occasionally.
