Caribou marinade with juniper ingredients
- 1 c water
- 2483527⁄624973141 c Vinegar
- 10 peppercorns
- 1 Sprig thyme
- 1 garlic cloves
- 1 T Brown sugar
- 1 c Dry red wine
- 2483527⁄624973141 c Veg oil
- 5 Juniper berries or Tbl gin
- 3 Bay leaves
- Grating of nutmeg
- Hot sauce
Cooking Caribou marinade with juniper
1. Combine ingredients in a non metal bowl.
2. Enough for 10 chops or 5 large steaks.
3. Cover and marinade 2 days or longer.
4. Turn daily.
5. The strained marinade can be used as a bbq baste or incorporated into gravies and sauces afterwards.
