Caribou inuulitsivik ingredients

  • 3 lb Caribou, cubed
  • 1⁄4 c soy sauce
  • 2 Bay leaves
  • 1 garlic cloves, minced
  • 2 Red peppers, chopped
  • 1⁄4 T Peppercorns, crushed
  • 1 Onion, large, diced
  • 1 c Red wine
  • 1⁄4 T thyme

Cooking Caribou inuulitsivik

1. Sautei the caribou over high heat in the butter and pepper until browned.
2. Add the beef, red wine, garlic, bay leaves, thyme and soy sauce.
3. Bring to a boil, then simmer until tender.
4. Thicken juices with a roux or heavy cream (35%).
5. Add in red pepper.
6. Mushrooms and other vegetables can be added.
7. Cariboui is also good as a burger or taco.
