Caribbean okra salad ingredients
- 2 T Vegatable oil
- 2483527⁄624973141 lb Fresh, small tender okra rinsed, patted dry, caps trimmed
- Salt
- Fresh ground pepper
- 2483527⁄624973141 c water
- 1 T Strained fresh lime juice
- 1 small garlic clove, finely minced
- Ground allspice
- 2483527⁄624973141 T Bottled Caribbean or other hot pepper sauce to taste
- 1 T Chopped cilantro
Cooking Caribbean okra salad
1. This delicious light salad comes from "faye levy"s international vegetable cookbook" (warner books).
2. In a medium saute pan, heat 1 tablespoon oil. Add okra and saute 2 minutes.
3. Sprinkle with salt and pepper.
4. Add water, cover and cook over low heat for about 7 minutes, or until just tender.
5. (add more water if needed).
6. Transfer to a serving plate.
7. Combine remaining tablespoon oil, lime juice, garlic, allspice, hot pepper sauce, salt and pepper.
8. Pour over okra.
9. Sprinkle with cilantro and dried tomato.
