Caramelized mamey flambe with frozen yogurt ingredients

  • 1 1⁄2 lb Mamey, ripe
  • 1 T margarine
  • 2 T Brown sugar
  • 1 T Fresh lime juice
  • 2 T Unsweetened orange juice
  • 3 T Apricot flavoured brandy
  • 1 c Frozen nonfat vanilla yogurt
  • Lime slices (optional)

Cooking Caramelized mamey flambe with frozen yogurt

1. Cut mamey in half lengthwise; remove seed.
2. Peeli and cut lengthwise into 1 inch slices and set aside.
3. Place margarine in a large skillet; place over medium heat until margarine melts.
4. Add brown sugar and lime juice; stir well.
5. Add mamey; cook 2 minutes.
6. Turn mamey slices, and cook an additional 2 minutes.
7. Add orange juice and brandy.
8. Ignite brandy mixture with a long match; let flames die down.
9. Arrange mamey slices on each of 4 dessert plates; spoon sauce evenly over fruit and top each with ¼ cup frozen yogurt.
10. Garnishi with lime slices, if desired.
11. Serve immediately.
12. Yield: 4 servings - 210 cal. Per serving.
