Canada: tourtiere - pork pie ingredients
- 3 c Mashed potatoes
- 3 lb Lean pork, ground
- 1 c water
- 1⁄4 t Nutmeg
- 1⁄4 t Allspice
- 1 T Salt
- 1⁄4 t Pepper
- 1⁄2 c Onion, chopped
- Pastry for 2 (2 crust) pies
Cooking Canada: tourtiere - pork pie
1. Tourtiere or pork pie is a regional french-canadian dish usually served at christmas, this recipe makes two pies, each pie makes 8 servings.
2. There are many recipes for this pie, and this is called "toochie" pie. In a saucepan, combine the ground pork, water, nutmeg, allspice, salt, pepper and onion.
3. Cook over moderate heat for 30 minutes, stirring often to prevent sticking.
4. Remove from heat; add the mashed potatoes; and mix well.
5. Cool. Fill two pastry-lined plates;adjust top crusts, slashing pastry to allow for the steam to escape as the pies bake.
6. Bakei in a hot oven, 425 °F. , for 40 minutes.
7. Serve hot or cold.
