California Pistachio Pasta Party Salad

California Pistachio Pasta Party Salad ingredients
- 6 oz Rotini or shell macaroni
- Salted water
- Oregano dressing (recipe follows)
- 2 c Fresh spinach, torn
- 1 c Each chopped tomato and blanched pea pods
- 1⁄4 c Natural California pistachios, chopped
- Pepper
- Parmesan cheese
Cooking California Pistachio Pasta Party Salad
1. Cook rotini in boiling, salted water according to package directions; drain.
2. Marinatei hot rotini in Oreganoi Dressingi (recipe below); cool at room temperature.
3. Combine with spinach, tomato, pea pods, pistachios and black pepper to taste.
4. Sprinkle with Parmesani cheese.
5. Less than 200 calories per serving.
6. Oregano Dressing: Combine 1/4 cup each oil and red wine vinegar, 3/4 teaspoon crushed oregano and 1/8 teaspoon garlic powder.
7. Makes 1/2 cup.
