Brunch Casserole ingredients

  • 1 1⁄2 lb beef, ground
  • 1 Onions, finely chopped
  • 2 T oil, olive, or butter
  • 2 garlic cloves, minced
  • 1 mushrooms, 4 oz can, sliced, drained
  • 2 t Salt
  • 1⁄2 t Nutmeg
  • 1⁄2 t Oregano
  • 1⁄2 spinach, frozen package, chopped, thawed, drained
  • 3 T flour
  • 6 Eggs, beaten
  • 1⁄4 c milk, scalded
  • 1⁄2 c cheddar cheese, sharp, grated

Cooking Brunch Casserole

1. In skillet, lightly brown ground beef and onion in olive oil; drain well.
2. Place in well-greased crockpot.
3. Stiri in remaining ingredients except eggs, milk and cheese until well blended.
4. Beat eggs and milk together.
5. Pour over other ingredients; stir well.
6. Dusti with additional nutmeg.
7. Cover and cook on Low setting for 7 to 10 hours or until firm.
8. Just before serving, sprinkle with grated cheese.
9. 6 to 8 servings (About 2-1/2 quarts).
