Broiled Swordfish Steaks ingredients
- Seasoning mix
- 1 T Cayenne pepper
- 1 T Salt
- 1 1⁄2 t garlic Powder
- 1 1⁄2 t Onion powder
- 1 1⁄4 t Fennel seed; ground
- 1 t Anise seed; ground
- 1 t Ground cinnamon
- 1 t Ground cloves
- 1 t Ground ginger
- 3⁄4 t Black pepper
- 1⁄2 t white pepper
- 6 Swordfish steaks; at room te
- 4 T Unsalted butter, melted
Cooking Broiled Swordfish Steaks
1. Recipe by: Chef Paul Prudhomme's Fiery Foods That I Love Preparation Time: 15:0 Combine the seasoning mix ingredients in a small bowl.
2. Place the broiler rack in the middle position and preheat the broiler.
3. Dip each steak in melted butter, coating both sides.
4. Sprinkle one side of each steak with 3/4 teaspoon of the seasoning mix and place seasoned side down on a broiler-proof pan. Seasoni the other side of each steak with 3/4 teaspoon seasoning mix. Broili until the tops are browned but not burned, about 4 minutes.
5. Serve immediately.
