- 10 g Salt
- 1⁄10 dl Lemon juice, fresh pressed
- 30 g Butter, cooking
- 1⁄10 Matignon for vegetables
- 1⁄5 chicken stock
- 1⁄50 Spice bag
- 20 g Butter, cooking

1. WASH CELERY AND REMOVE FIBRES BLANCH IN LEMON, SALTED WATER MELT BUTTER IN A BRASIERE OR SAUTOIR SAUTE MATIGNON FOR 2 MINUTES ADD CELERY AND STOCK BRING TO BOIL ADD SPICE BAG, COVER AND BRAISE IN OVEN UNTIL TENDER REMOVE CELERY FROM STOCK CUT LENGTHWISE AND THEN IN 6cm PIECES ARRANGE IN A VEGETABLE DISH STRAIN STOCK THROUGH A FINE CHINOIS AND REDUCE ADD BUTTER FLAKES POUR OVER CLELERY JUST BEFORE SERVICE.
