Braised pork chops with prunes and apricots ingredients

  • 8 Center-cut pork chops (about ½ inch thick), trimmed
  • 1⁄3 c All-purpose flour
  • 1⁄4 c Vegatable oil
  • 2 large Onions, sliced
  • 5 c Canned low-salt chicken
  • -broth
  • 1 1⁄2 c Dry red wine
  • 3⁄4 c Pitted prunes
  • 1⁄2 c Dried Apricots
  • 3 T Chopped fresh parsley

Cooking Braised pork chops with prunes and apricots

1. Seasoni pork with salt and pepper.
2. Place flour in pie dish.
3. Coat pork with flour, shaking off excess.
4. Heat oil in heavy large dutch oven over high heat.
5. Add half of pork chops; cook until brown, about 3 minutes per side.
6. Transfer to paper towels; drain.
7. Repeat with remaining pork chops.
8. Drain all but 2 t oil from dutch oven.
9. Add sliced onions to dutch oven and saute until light brown, about 5 minutes.
10. Place pork chops over onions.
11. Add broth and wine.
12. Bring to simmer.
13. Re- duce heat to medium-low.
14. Cover; cook 15 minutes.
15. Add fruit.
16. Cover; simmer until pork is very tender, about 45 minutes.
17. (can be made 1 day ahead.
18. Cover, chill.
19. Rewarm over medium-low heat, stirring occasionally, before continuing).
20. Using slotted spoon, transfer pork to platter.
21. Using same spoon, arrange onions and fruit around pork.
22. Tent with foil.
23. Boil cooking liquid until thickened slightly, stirring occasionally, about 20 minutes.
24. Season with salt and pepper.
25. Spoon over pork.
26. top with parsley.
