- 1 kg Belgian endives
- 50 g Butter, cooking
- 1⁄10 Matignon for vegetables
- 1⁄3 white stock
- 1⁄50 dl Lemon juice, fresh pressed
- 1 seasoning (salt+pepper)
Cooking Braised endives
1. WASH ENDIVE WELL BLANCH IN LEMON, SALTED WATER SAUTE MATIGNON WITH BUTTER IN A SAUTEUSE ADD ENDIVES ADD STOCK AND SEASONING BRING TO BOIL COVER AND BRAISE UNTIL TENDER SERVE IN A VEGETABLE DISH STRAIN AND REDUCE REMAINING LIQUID POUR OVER ENDIVE.
