Boboli pizza with garlic, peppers and goat cheese

Boboli pizza with garlic, peppers and goat cheese ingredients
- 1⁄4 c olive oil
- 1 large Red onion; thinly sliced
- 6 large garlic cloves, thinly sliced
- 1⁄2 large Red bell pepper, thinly
- Sliced
- 1⁄2 large Yellow or Green Bell Pepper
- -thinly sliced
- 1⁄4 t Dried crushed red pepper
- Salt
- Pepper
- 16 oz Boboli, (baked cheese pizza
- -crust)
- 5 oz Soft Goat Cheese, crumbled
- 1 T Fresh Thyme Leaves, or
- 1 t Dried thyme leaves, crumbled
Cooking Boboli pizza with garlic, peppers and goat cheese
1. Preheat oven to 450°F.
2. Heat olive oil in a heavy large skillet over medium-low heat.
3. Add sliced onion and garlic and saute until very soft, about 20 minutes.
4. Add sliced bell peppers and saute 5 minutes.
5. Mixi in dried crushed red pepper.
6. Seasoni with salt and pepper.
7. Place boboli on a pizza pan or cookie sheet.
8. Tip skillet so oil accumulates at one side.
9. Brush boboli with oil in skillet.
10. Top with onion-pepper mixture.
11. Sprinkle with cheese and thyme.
12. Bakei until cheese melts, about 12 minutes.
13. Cut into wedges and serve.
