Black-eyed peas and rice

- Main Ingredient: Cereals Rice and Grains Beans Peas
- Yield:
Black-eyed peas and rice ingredients
- 1⁄2 c Uncooked regular long grain
- 1⁄4 c Green bell pepper, chopped
- 1⁄2 c water
- 1⁄4 t Salt
- 1⁄8 t Pepper
- 1 small Zucchini, sliced
- 15 oz Black-eyed peas, rinsed and
- 16 oz Stewed tomatoes, undrained
- 2 T Fresh parsley, chopped
Cooking Black-eyed peas and rice
1. Recipe by: pasta, rice & beans heat all ingredients except parsley to boiling in 2 qt. saucepan; reduce heat.
2. Cover and simmer 20 min.
3. stir in parsley.
