Blackbean and Rice Salad ingredients

  • 2 c cooked rice, cooled to room temperature
  • 1 c Cooked black beans
  • 1 c Chopped fresh tomato
  • 1 c shredded Cheddar cheese (optional)
  • 1 T Chopped fresh parsley
  • 1⁄4 c prepared Italian dressing*
  • Lettuce leaves

Cooking Blackbean and Rice Salad

1. *Any type of salad dressing may be used.
2. Recipe provided by USA Ricei Council.
3. Combine rice, beans, tomato, cheese and parsley in large bowl.
4. Pour dressing over rice mixture; toss lightly.
5. Serve on lettuce leaves.
