Cooking Biscuit de reims
1. Take 9 eggs, weigh them and take same weight in sugar.
2. Take 6 eggs, weigh them and take same weight in flour.
3. Take 3 eggs, weigh them and take same weight in butter.
4. Beat the whites of 9 eggs till stiff.
5. Foldi in sugar.
6. Then add the 9 egg yolks, well-beaten.
7. Pour in flour gradually.
8. Put in melted butter.
9. Start baking in a slow oven - increase to moderate.
10. It takes at least 1 hr. To bake.
