Beer cheese ingredients

  • 1 1⁄2 t Finely chopped garlic
  • 1 T worchestershire sause
  • 1⁄2 t Tabasco sauce
  • 1⁄2 t Dry mustard
  • 1⁄2 t Salt
  • 1 c Beer
  • 4 c Sharp cheddar cheese
  • (freshly grated)

Cooking Beer cheese

1. In a deep bowl, crush the garlic to a paste with a pestle or the back of a spoon.
2. Beat in the worcestershire, tabasco, mustard and salt.
3. Next, stir the mixture constantly, pour in the beer in a slow, thin stream.
4. After the ingredients are well blended, beat in the cheese, a cupful at a time, and continue to beat until the mixture is smooth.
5. Pack the beer cheese tightly into a 2-cup mold or an earthenware crock.
6. Cover with a lid or foil and refrigerate for at least 24 hours before serving.
7. Note: beer cheese is traditionally served with crisp crackers as a first course or an accompaniment to drinks.
