Beef olives ingredients

  • 1 lb Round steak
  • 1 med sized onion
  • 1 T Chopped parsley
  • 1⁄4 t Allspice
  • 1 t Salt
  • 1⁄4 t Pepper
  • flour
  • Bacon
  • 2⁄3 c stock or water
  • 1 t Vinegar
  • 1 t Catsup

Cooking Beef olives

1. Round steaki prepared in this manner becomes very appetizing.
2. The "olives" are kin to "veal birds" but the meat in this case is stuffed only with bacon and seasonings.
3. Have the round steak sliced very thin.
4. Pound it with a rolling pin and dust with flour.
5. Mixi the seasonings well together, having the onion chopped fine.
6. Cut the meat in strips which will accommodate about half a slice of bacon, and place a piece of bacon and some of the seasonings on each piece of meat.
7. Roll each piece up and tie it with thin cord or coarse thread.
8. Place in a roasting pan, close together, and pour over the "olives" the water or stock seasoned with the vinegar and catsup.
9. Bakei in a slow oven (300) in a covered pan for about two hours.
10. Then remove the cords and serve with a gravy made from the liquid in the pan.
