Beef Fajitas 2 2 ingredients
- 3 lb Skirt steak
- 2 Large yellow onion
- 2 T Vegatable oil
- 16 flour tortilla
- 2 c Cheese
- 3 c guacamole
- 1 c Lime Juice
- 1 T Freshly ground black pepper
- 2 T garlic
- 1⁄2 c Fresh Cilantro
- 2 Scallions
- 2 Cherry tomatoes
- 1 t garlic
Cooking Beef Fajitas 2 2
1. Combine lime juice, black pepper and garlic.
2. Peeli the fatty membrane from both sides of the skirt Steak.
3. This requires a very sharp knife.
4. Add meat to marinade and marinate for at least 4 hours, preferably overnight.
5. Keep it in the refrigerator if you marinate overnight.
6. Make the pico de gallo by combining cilantro, scallions, tomatoes and garlic in a bowl.
7. Slice the yellow onions into ¼-inch slices, and cut each slice into a semicircle.
8. Grilli the meat until it is cooked slightly less than the way you like it. Meanwhile, saute the onions in the oil until they are soft.
9. After removing the meat from the grill, slice it into strips that are cut across the grain.
10. The strips should be 3-4 inches long and ¼ inch thick.
11. Add the strips to the onions in the pan, and fry for another minute or two. Place on the table the pan full of meat, the bowl of pico de gallo, a basket with the tortillas, a bowl with the guacamole, and a bowl with the grated cheese.
12. You may wish to provide picante sauce in addition.
13. Each person makes their own fajita by taking a tortilla, spooning some of the meat onto it, then adding their choice of each of the other ingredients in whatever combination they want.
