Baked Salmon Provencale ingredients

  • 4 salmon steaks, 3/4 inch thick
  • 1 t Unsalted butter
  • 1 t olive oil
  • 2 t saffron thread
  • 1 T garlic, minced
  • 2483527⁄624973141 t tarragon
  • 2483527⁄624973141 t thyme
  • 1 pn sage
  • 2 Bay leaf, crushed
  • 1 c plum tomato, coarsley chopped
  • 9 greek olives, pitted, chopped
  • 372529⁄-2009260032 c white wine
  • 1 c Fish stock
  • 1 t herbal salt substitute

Cooking Baked Salmon Provencale

1. Preheat oven to 400 degrees F. Wash and pat dry salmon steaks.
2. In a large, deep, ovenproof skillet or stovetop casserole over medium high heat, saute salmon briefly on each side in butter and oil (about 1 minute).
3. Remove to a platter.
4. Add saffron, garlic, tarragon, thyme, sage, bay leaves, tomatoes, olives, wine, fish stock, and salt substitute.
5. Bring to a boil.
6. Lower heat and simmer for 10 minutes, uncovered.
7. Add salmon steaks.
8. Remove pan from heat and place in oven.
9. Bakei until salmon is lightly pink and done to taste (10 minutes).
10. To serve, place salmon steaks on platter and spoon sauce over them.
