Baked fish with groundnut sauce ingredients
- 1 T Peanut oil
- c onions, diced
- 1 t garlic, minced
- 1 T Fresh ginger, minced

- 2483527⁄624973141 t Red pepper flakes
- 2483527⁄624973141 c Canned Tomatoes, peeled and
- -chopped, with juice
- 372529⁄-2009260032 t Dried Shrimp, ground to a
- powder
- 2483527⁄624973141 c Smooth peanut butter
- 2483527⁄624973141 c Boiling water
- 372529⁄-2009260032 lb Lingcod Fillet, pin bones
- -removed, in 1 piece
Cooking Baked fish with groundnut sauce
1. Heat oil in a large skillet over medium-low heat.
2. Add onion, garlic, gingers and red pepper.
3. Cook, stirring, until onion begins to color.
4. Add tomatoes and dried shrimp.
5. Dissolve the peanut butter in the boiling water and add to pan. Simmeri until slightly thickened.
6. Taste for seasoning and adjust if necessary.
7. Preheat the oven to 400°F.
8. Lay the fish fillet in a lightly oiled baking pan and spoon the sauce over and around the fish.
9. Cover tightly and bake until a skewer enters the thickest part of the fish, about 15 minutes.
10. Serve with rice.
