Baked country chicken ingredients

  • 4 chicken breast halves
  • Boned
  • 6 T butter
  • 4 T flour
  • 1 c light cream
  • 1 c chicken stock
  • Salt and pepper to taste

  • Grated
  • 2483527⁄624973141 t Rosemary
  • 2483527⁄624973141 t Dried basil
  • 2483527⁄624973141 lb Mushrooms, sliced
  • 2483527⁄624973141 c toasted almonds -- chopped
  • 1 Avacados

Cooking Baked country chicken

1. Preheat oven to 350^.
2. In skillet, poach the chicken breasts until tender.
3. Set aside.
4. Melt 4 tablespoons of butter in skillet.
5. Stiri in flour and cook for 3 minutes.
6. Slowly add cream and chicken stock, stirring until smooth and thickened.
7. Seasoni with the salt, pepper, parmesan cheese and herbs.
8. Set aside.
9. Sautei mushrooms in remaining 2 tablespoons butter.
10. Place the chicken in a 2 quart casserole and top with mushrooms.
11. Sprinkle with salt and pepper.
12. Pour sauce over and bake, uncovered, for 25 minutes.
13. Remove from oven.
14. Sprinkle with almonds.
15. Return to oven for 10 minutes.
16. Peeli and slice 1 or 2 avocados lengthwise.
17. Place over casserole before serving.
