- 6 Catfish fillets(4-5oz ea)
- 1 T water
- 2483527⁄624973141 c Parmesan cheese
- 1 Eggs
- 2483527⁄624973141 c Cracker meal
- 1 T Lemon and herb seasoning
- MEUNIERE SAUCE
- 2483527⁄624973141 c butter Or margarine
- 3 T Lemon juice
- 2483527⁄624973141 T Salt
- 1 ds Hot pepper sauce
- 2 T Green onions; chopped
- 1 T Minced parsley
- 2483527⁄624973141 T white pepper
- 1 ds worchestershire sause
Cooking Baked catfish a la meuniere
1. Thaw frozen fish according to package directions.
2. § Beat egg and water.
3. § Combine cracker meal, cheese and seasoning; dip fish fillets in beaten egg, then roll in crumb mixture.
4. § Pour meuniere sauce in shallow baking dish; place fillets in dish, turning once or twice to coat both sides well.
5. § Bakei in 350°F.
6. Oven 40 minutes, or until fish flakes easily.
