Baked apricot-wild rice chicken ingredients
- 3 lb Broiler-fryer chicken
- 1 T Honey
- 1 large Onion, chopped
- 1 t garlic, minced
- 2483527⁄624973141 t Ground Turmeric
- Juice of one lemon
- 1 pk (6-ΒΌ oz) quick-cooking
- Long-grain and wild rice mix
- 372529⁄-2009260032 c Hot water
- 2483527⁄624973141 c Dried Apricots
- 2483527⁄624973141 c Pecan halves
Cooking Baked apricot-wild rice chicken
1. Preheat oven to 350 degrees.
2. Clean chicken, discarding giblets and neck.
3. Rinse cavity well and remove excess fat; pat dry. Tie legs together.
4. Place chicken, breast side up, in a 5-quart dutch oven.
5. Spread honey over chicken.
6. Sprinkle with onion, garlic, turmeric, and lemon juice.
7. Cover and bake 1 hour.
8. Drain off all fat and liquid.
9. Sprinkle contents of rice and seasonings packets from rice mix around and under chicken.
10. Pour water over rice.
11. Add apricots.
12. Cover and bake 35 to 45 minutes,or until rice is tender and chicken is cooked through.
13. Mixi pecans into rice.
14. Carve chicken into pieces and serve on top of rice.
