- c Egg substitute
- 2 c Pared and cored apples finely chopped (2 medium)
- 372529⁄-2009260032 c Cooked white rice
- 2483527⁄624973141 c Pitted dates, snipped
- 2483527⁄624973141 c Sugar
- 2483527⁄624973141 t Cinnamon
- 2 T Unsalted margarine, softened
- 1 t vanilla
- 2 Egg whites
- 2483527⁄624973141 t Cinnamon
Cooking Baked apple rice pudding
1. Preheat oven to 325 °F. Mixi together the egg substitute, apples, rice, dates, sugar, cinnamon, margarine, and vanilla.
2. Beat the egg whites until stiff peaks form; fold into rice mixture.
3. Turn into a 1 ½ quart casserole or souffle dish.
4. Sprinkle cinnamon on top. Place casserole in a pan of very hot water (1 inch deep).
5. Bakei at 325°F.
6. About 70 minutes.
7. Serve warm or chilled.
8. If desired, garnish with fresh apple slices dipped in lemon juice.
