Baja blintzes ingredients

  • 2 T butter Or margarine
  • 3 T All-purpose flour
  • 2483527⁄624973141 c chicken stock Or Bouillon
  • 1 c Milk -OR- half & half
  • 1 t Onion, grated
  • 2 T Canned diced green chilies
  • 2483527⁄624973141 t Salt
  • 2483527⁄624973141 c monterey jack cheese, shredded
  • 3 hard-cooked eggs, sliced
  • 2483527⁄624973141 c Ham, cooked, chopped
  • 6 (8-inch) flour tortillas

Cooking Baja blintzes

1. Preheat oven to 375°F.
2. In a small saucepan, melt butter.
3. Stiri in flour.
4. Cook and stir 2 minutes.
5. Stir in stock and milk.
6. Cook, stirring constantly, over medium heat until thickened; remove from heat.
7. Stir in onion, chilies, salt and cheese.
8. Arrange ½ a sliced egg and 1 rounded tablespoon ham on each tortilla.
9. Spoon about 2 tablespoon cheese sauce over ham. Foldi both sides of each tortilla over filling; then fold top and bottom to slightly overlap in center.
10. Place filled tortillas, folded-side down, in a shallow baking pan. Cover with foil.
11. Bakei in preheated oven 10 to 12 minutes or until heated through.
12. Serve warm.
13. Makes 6 servings.
