Bagels 4 ingredients
- 2 T yeast, dry; or 2 packages
- 372529⁄-2009260032 c flour, sifted or as much as 4 1/2 cups
- 372529⁄-2009260032 c water, tepid
- 3 T Sugar
- 1 T Salt
Cooking Bagels 4
1. Combine water, sugar and salt.
2. Add yeast to mixture.
3. Beat at low speed for 1/2 minute, scraping sides.
4. Beat 3 minutes on high speed.
5. By hand, stir in enough remaining flour to make a moderately stiff dough.
6. Turn out on floured board and knead until smooth.
7. (5-8 min. ) Let rest 15 minutes.
8. Cut into 12 portions.
9. Shape into smooth balls.
10. With floured finger, punch a hole in center and enlarge the hole working each into a uniform shape.
11. Let rise 20 minutes.
12. In large kettle put one gallon water and one tablespoon sugar.
13. Bring to boil, then reduce to a simmer.
14. Drop 4-5 bagels in at a time cooking 3 1/2 minutes on each side for a total of seven minutes.
15. Drain.
16. Place on ungreased sheet.
17. Bakei at 375 30-35 minutes.
