Backwoods Gumbo ingredients

  • 4 lb turkey giblet
  • 4 T Peanut oil
  • 4 T flour
  • 2 c Celery
  • 1 c Onions
  • 1 c Green bell pepper
  • 3 T garlic
  • 14 oz tomato concasse
  • 1 t thyme
  • 1 t basil
  • 3 Bay leaf
  • 2 T File powder
  • 2 T worchestershire sause
  • 1 T Tabasco sauce
  • 1 lb smoked summer sausage

Cooking Backwoods Gumbo

1. Boil giblets in 4 quarts salted water, until very tender.
2. Heat oil in a skillet, over a moderate flame.
3. Whiski in flour, heat and stir to make a golden roux.
4. Add celery, onions, bell peppers, garlic, and tomatoes.
5. Heat and stir for 15-20 minutes, until tender.
6. Straini gibleets, reserving broth.
7. Pick meat from necks, finely mince gizzards.
8. Add remaining ingredients, except sausage.
9. Stiri in 2 cups reserved broth and simmer for 30 minutes.
10. Add sausage and simmer for 15 minutes.
11. Serve over hot cooked rice.
