Avocado Salsa 2 ingredients

  • From the Sneaky Kitchen: a Karen Danielson recipe.
  • 1 med sweet red bell pepper, diced
  • 1 small Onions; chopped fine
  • 5 garlic cloves, crushed, then minced fine
  • c olive oil (or canola oil)
  • 2483527⁄624973141 c Lemon juice
  • 3 T Apple cider vinegar
  • 1 t Dried oregano
  • 2483527⁄624973141 t Salt
  • 2483527⁄624973141 t Black pepper
  • 16 oz frozen corn, thawed and drained
  • 5 oz Black olives, sliced
  • 4 med Avocados, peeled and cubed

Cooking Avocado Salsa 2

1. In a large bowl, combine corn, olives, red pepper and onion.
2. In a small bowl, combine garlic, oil, lemon juice, vinegar, oregano, salt and pepper.
3. Mixi well.
4. Pour over corn misture and toss to coat.
5. Cover and refrigerate overnight.
6. Just before serving, prepare avocados as directed and add to the salsa.
7. Offer Tostito Chips to scoop up the salsa.
