Avocado And Prawn Salad ingredients

  • 12 large tiger prawns
  • grated zest and juice of one lime
  • some salt and pepper
  • 1 large Ripe avocado
  • 2 T Walnut oil
  • 1 T Red Wine Vinegar
  • 1 T Chopped parsley
  • 1 t wholegrain mustard
  • 1 t Caster sugar
  • 1 large beef tomato, sliced
  • a few mixed salad leaves to garnish

Cooking Avocado And Prawn Salad

1. Place prawns on a piece of kitchen towel and pat dry then place them in a small dish with the lime zest and a little fresh ground black pepper.
2. Cover and refrigerate until you are ready to assemble the salad.
3. Cut the avocado in half lengthwise and twist to separate the two halves.
4. Place the blade of a sharp knife horizontally into the stone and twist to remove.
5. Peeli off the skin and cut into thin slices.
6. Place in a bowl and cover with the lime juice.
7. Mixi oil, vinegar, parsley, mustard, sugar, and seasoning in jug. Whiski with a fork.
8. Arrange the prawns, avocado, tomato and salad garnish on two plates.
9. Pour dressing over salad, sprinkle with freshly ground black pepper and serve with warm bread rolls.
