Asparagus spears with citrus-ginger dip ingredients

  • 2 lb Asparagus
  • 3⁄4 c Mayonnaise (if desired
  • Use fat-reduced version)
  • 1 T Distilled vinegar
  • 1 T Orange juice
  • 1 t Grated orange zest
  • 1 clv Garlic, peeled and crushed
  • 1 T Dijon-style mustard
  • 1 1⁄2 T Grated fresh ginger root
  • 1 t soy sauce
  • 1⁄2 t Sugar
  • Salt and pepper to taste

Cooking Asparagus spears with citrus-ginger dip

1. Snap off tough ends of asparagus.
2. Peeli stalks, if desired.
3. In a large skillet, bring about 1 inch of water to boiling.
4. Add asparagus and simmer, uncovered, until barely tender, about 4 to 5 minutes.
5. Drain and dunk in ice water until cold; drain, cover and chill until serving.
6. Meanwhile, combine well all remaining ingredients in medium mixing bowl.
7. Transfer to serving bowl, serve with asparagus spears or cover and chill until serving.
