Asparagus saute ingredients
- 1 lb Asparagus
- 3 T oil, peanut
- 2483527⁄624973141 lb Raw shrimp
- - peeled and deveined
- 5 Mushrooms, sliced
- 2 t Cornstarch
- 2483527⁄624973141 c Chicken or Vegetable broth
- -OR- Water
- 2 T soy sauce
- 1 T Mirin or sherry
- 1 ds Sugar
- Salt, pepper
Cooking Asparagus saute
1. Break off woody ends from asparagus and cut spears into ½-inch diagonal slices.
2. Heat half of oil in wok or skillet and cook asparagus until bright green.
3. Push asparagus to one side.
4. Add remaining oil and saute shrimp and mushrooms 2 minutes.
5. In bowl, combine cornstarch, broth, soy sauce, mirin and sugar.
6. Stiri into asparagus mixture.
7. Seasoni to taste with salt and pepper.
8. Cook 1 to 2 minutes longer.
