Asparagus salad and lemon-mustard vinaigrette ingredients
- 2 lb Asparagus
- 1 Red bell pepper, roasted
- -- peeled & cut into strips
- Vinaigrette
- 1⁄4 c olive oil
- 2 T Lemon juice
- 1 t Balsamic vinegar
- 1 T Dijon
- Salt and pepper
Cooking Asparagus salad and lemon-mustard vinaigrette
1. Wash & bend asparagus discarding the tough ends that break off. Cut diagonally into three-inch pieces.
2. Fill a large pot with water & bring to a rolling boil.
3. Cook asparagus for 2 minutes.
4. Drain & rinse in cold water.
5. Place with pepper strips in a large serving bowl & set aside.
6. Vinaigrettei: whisk oil, lemon juice & vinegar in a bowl.
7. Stiri in mustard, salt & pepper.
8. Pour over the asparagus & pepper & toss to coat.
9. Serve at room temperature.
