Asian steak and asparagus noodle salad ingredients

  • 1 lb Asparagus
  • 2 Carrots
  • 2 t Vegatable oil
  • 3⁄4 lb Beef sirloin, strips
  • 3 clv garlic, minced
  • 1 t Cumin, ground
  • 1⁄2 t Chili paste or hot sauce
  • 1 T Lime Juice
  • 1⁄2 lb Wide rice stick noodles
  • Coriander leaves
  • Dressing
  • 1⁄3 c Peanut butter
  • 1⁄4 c soy sauce
  • 3 T Lime Juice
  • 1 T Sesame oil
  • 2 T water
  • 1 t Sugar
  • 1⁄2 t Chili paste
  • 1 clv garlic
  • 1⁄4 c Fresh chopped coriander

Cooking Asian steak and asparagus noodle salad

1. Cut asparagus diagonally into 1 ½ inch lenths.
2. Peeli and slice carrots diagonally.
3. Dressingi: in salad bowl, whisk peanut butter, soy sauce, lime juice, water, oil, sugar, chili paste and garlic; stir in coriander.
4. In wok, heat oil over high heat; stir-fry beef, garlic, cumin and chili paste for 2-3 minutes or until beef is browned but still pink inside.
5. Add lime juice; stir-fry for 15 seconds.
6. Add to dressing and toss to coat.
7. In large pot of boiling salted water, cook noodles, asparagus and carrots for 4 minutes or until noodles are firm and vegetables are tender crisp.
8. Drain and cool under running water; drain again and add to bowl.
9. Tossi with beef mixture until coated.
10. Garnishi with coriander approx.
11. 540 cal, 33 g pro, 19 g fat, 61 g carb, excellent source of iron, high source fiber.
