Arroz de polvo (octopus rice) ingredients

  • 2 lb Octopus
  • 3⁄4 c olive oil
  • 2 garlic clove, finely chopped
  • 1 large bell pepper, green, chopped
  • pepper, to taste
  • 1 lb Rice, short grain
  • 1 c Red wine
  • 1 Onion, chopped
  • 3 Tomato, skinned & chopped
  • Salt to taste
  • Chili powder, to taste

Cooking Arroz de polvo (octopus rice)

1. Precook octopus in red wine with a little water.
2. The octopus will exude liquid so that you are likely to end up with more cooking liquid at the end. Retain this and add water to make it up to 2-½ cups.
3. Cut the drained octopus into small pieces.
4. Heat olive oil in a large saucepan; add a chopped onion and cook gently, stirring, for 2 or 3 minutes.
5. Add garlic, tomatoes, and pepper.
6. Seasoni with salt, pepper and chilli powder to taste.
7. Cook for a few minutes longer.
8. Add the cooking liquid from the octopus and bring it to the boil.
9. Add rice (preferably a short-grain risotto rice like arborio) and bring back to the boil, then turn the heat very low and put the lid on the saucepan.
10. After 15 minutes, stir to ensure the rice is not catching on the bottom of the saucepan.
11. In 5 minutes more, taste a grain or two to make sure it is soft.
12. The rice should still be quite damp.
13. Serve.

sorry, but my inglish is bad, why is the title in spanish and teh recipe in english?

What do you mean by polvo? the translation is dirt... :S

If the Guest cook were a bit more cultured, he will know that Arroz de Polvo is a Portuguese dish and the title is correctly written. Despite using red wine (and not white as the original recipe), it is a good recipe.

Instead of making ignorant remarks about cooking some people should really try to understand how to cook first...

When you precook the octopus, put there an onion the same size of the head, when the onion is cooked, so is the octopus, and you get added flavor from the onion :)
