Arhat's Fast ingredients
- 3 oz Cashews
- 2 sli Ginger
- 2 Green onions
- 3 oz bamboo
- 3 oz Red or green bell pepper
- 8 Water Chestnuts
- 3 oz Carrots
- 3 oz Asparagus tips
- Salt
- 1 T soy sauce
- 1 T Sugar
- 1 T Rice vinegar
- 1 T water
- 1⁄2 t Cornstarch
- 1 t water
Cooking Arhat's Fast
1. Deep-fry the cashew nuts in hot oil over a moderate heat until they are golden brown, lift out and drain well.
2. Mixi together the ingredients.
3. For seasoning sauce in a small bowl, mix the thickening paste in another.
4. Set aside in a wok or large frying pan, heat 1 tablespoon oil and stir fry the ginger and onions for 15 seconds.
5. Add the bamboo, red pepper, water chestnuts and carrots and stir-fry for 2 minutes.
6. Mix in the seasoning sauce and bring to a boil.
7. Add cashew nuts and asparagus tips and season to taste with salt.
8. Thicken with corn flour paste and serve sprinkled with sesame oil.
