Apricot-confection squares

Apricot-confection squares ingredients
- 2 c Uncooked, dried apricots
- 4 pk Unflavored gelatin
- 2 c Sugar
- 1⁄4 c Orange juice
- 2 t Grated orange rind
Cooking Apricot-confection squares
1. Line 8 x 8 x 2" pan with waxed paper.
2. Cook apricots as directet; drain; reserve 1 cup liquid.
3. Pureei apricts in blender; measure 1 cup. Soften gelatine in ½ cup cold water.
4. In 1 quart saucepan, heat reminding apricot liquid.
5. Add suggar and bring to a boil.
6. Add sugar, bring to a boil.
7. Add gelatine, orange juice and rind.
8. Boil gently for 20 min. Remove from heat, add apricots.
9. Mixi well.

11. Pour into pan; allow to set, cut into squares; roll in powdered sugar.
