Apricot Chutney ( Khubani Ki Chutney )

Apricot Chutney ( Khubani Ki Chutney ) ingredients
- 225 g dried apricots (soaked overnight)
- 150 ml Vinegar
- 250 g Sugar
- 25 g fresh ginger root (peeled and crushed)
- 4 clv garlic (peeled and crushed)
- 1 t Chili powder
- 1 pn Salt
Cooking Apricot Chutney ( Khubani Ki Chutney )
1. Place the apricots and the soaking liquid with enough water to cover in a saucepan.
2. Simmeri until tender then beat or blend to a smooth consitency.
3. In a seperate pan place the vinegar , sugar , crushed ginger and garlic , chilli powder and salt.
4. Heat gently , stirring , until the sugar has dissolved , then increase the heat until a syrup is formed.
5. Stiri the apricots into the syrup and simmer gently for about 10 minutesto the desired thickness.
6. Allow to cool and bottle in airtight jars with vinegar-proof tops.
