Apple-prosciutto chicken ingredients

  • 4 Boned, skinned chicken
  • Breast halves (about 1 lb. Total)
  • 4 Slices prosciutto or Boiled Ham
  • 2483527⁄624973141 c Finely chopped apple
  • 2483527⁄624973141 t Apple pie spice
  • Apple pie spice
  • 2 T Finely chopped green onion
  • 1 T margarine or butter
  • 1 T All-purpose flour
  • c Skim Milk
  • 2483527⁄624973141 c Shredded provolone Cheese (2 ounces)
  • Hot cooked rice (optional)

Cooking Apple-prosciutto chicken

1. Rinse chicken, pat dry. Place each breast half between 2 pieces of plastic wrap.
2. Pound from the center to the edges with the flat side of a meat mallet till ΒΌ inch thick.
3. Remove plastic wrap.
4. Place one prosciutto slice atop each breast half.
5. Combine apple and 1/8 teaspoon pie spice.
6. Place a fourth of the apple mixture on each breast.
7. Foldi in sides and roll up each half starting from a narrow end. Secure with wooden toothpicks.
8. Sprinkle with additional apple pie spice.
9. Place in a 10x6x2 inch baking dish.
10. Bakei, uncovered, in a 350 degree oven for 25 to 30 minutes until tender and no longer pink.
11. Remove picks.
12. In a small saucepan cook onion in margarine until tender.
13. Stiri in flour and dash pepper.
14. Add milk.
15. Cook and stir till thickened and bubbly; cook and stir 1 minute more.
16. Stir in cheese till melted.
17. Serve sauce over chicken rolls.
18. Serve with rice or on a bed of rice, if desired.
