Apple and Onion Quiche ingredients

  • 1 c flour
  • 1⁄3 c Vegetable shortening
  • 1⁄2 t Salt
  • 1⁄4 c grapefruit soda
  • 1 c Onions
  • 2 T Unsalted butter
  • 2 c Apple
  • 1⁄2 c Jack cheese
  • 1⁄2 c Gruyere Cheese
  • 3 Eggs
  • 2 T Chinese mustard
  • 1 c Half-and-half
  • 1⁄2 t Kosher salt

Cooking Apple and Onion Quiche

1. Combine flour and salt in a large bowl.
2. Add the shortening and rub into flour with your hands, until well blended.
3. Add grapefruit soda, 1 tablespoon at a time, and toss with a fork.
4. Continue to moisten and toss with a fork just until dough holds shape.
5. Wrap in plastic and chill thoroughly.
6. Rollout to desired shape and press into a quiche pan. Line with foil and weight-down with beans.
7. Remove from heat, remove foil and beans, and cool.
8. Combine onions and butter in a skillet, over a medium flame heat and stir for 2-3 minutes, until slightly transparent.
9. Add apples and continue to saute until onions and apples have softened, without browning.
10. Remove from heat, cool.
11. Combine cheeses with apple mixture-mix well, set aside combine eggs, mustard, half & half, and kosher salt-mix well arrange the apple mixture into prepared pastry shell.
12. Pour egg mixture over the top. Bakei @ 375 °F for 35-40 minutes, until set Remove from heat and allow to rest briefly before cutting serve hot, warm, or at room temperature.
