  • 1 c buttermilk
  • 2 T Cooking oil
  • 1 c Oat bran
  • 372529⁄-2009260032 t baking powder
  • 2483527⁄624973141 t Salt
  • 2483527⁄624973141 t Cinnamon
  • 2 Egg whites
  • 2483527⁄624973141 c Shredded, peeled Apple

Cooking Apple and Oat Bran Muffins

1. In a med bowl stir together flour, oat bran, brown sugar, baking powder, baking soda, salt, nutmeg, and cinnamon.
2. Set aside.
3. In a small bowl combine buttermilk, egg whites, and oil, Add to dry ingredients; stir just till moistened.
4. Stiri in shredded apple.
5. Store batter, tightly covered, in the refrigerator for up to 5 days.
6. To bake, spray muffin cups with non-stick spray coating.
7. Spoon about 1/4 cup batter into each muffin cup. Bakei in a 375 deg F oven for 18-20 minutes or till a toothpick inserted near the center comes out clean.
8. Makes 12 muffins.
