Anticucho style grilled fish ingredients

  • 4 Fish filets, like shark tuna, cod, mahi mahi
  • 2 Pickled jalapenos, plus 2 Tbsp of the juice
  • 1⁄4 c To ½ c fresh lime juice
  • 1⁄4 c soy sauce
  • 1⁄2 c Vegatable oil
  • 5 Peeled garlic cloves
  • 1 t Cracked black pepper
  • 1 Fistful of fresh cilantro (remove the stems)

Cooking Anticucho style grilled fish

1. Combine and blend all ingredients, except fish, in blender until smooth.
2. Marinatei fish for 30-40 minutes.
3. Grilli over medium hot coals until cooked through.
4. Bastei with the reserved marinade several times during cooking.
5. Serve with lime wedges, avocado slices and pico de gallo.
6. We have also used this same marinade on boneless, skinless chicken breasts.
7. We marinate the chicken breasts for a couple hours though, and then barbeque them like we did the fish.

When i hear anticucho i think of aji panca, garlic, vinegar and olive oil as the basis of a marinade.
I suppose being Peruvian makes me go with 'our' recipe.
