Alu gosht kari (meat and potato curry)

Alu gosht kari (meat and potato curry) ingredients
- 1 1⁄2 kg Skirt steak
- (1 ½ lb)
- 1⁄4 c Oil
- 1 T Black mustard seeds
- 1⁄2 t fenugreek seeds
- 6 clv garlic, crushed
- 1 T Ginger, finely chopped
- 3 med Onions
- Finely sliced
- 1 1⁄2 t Turmeric
- 2 T Coriander
- 1 T Cumin
- 2 t Chili powder
- 3 t Salt
- 2 T Vinegar
- 2 t Garam masala
- 2 T Extra vinegar
- 750 g Cubed potatoes (¾ lb)
- 2 T Fresh coriander
Cooking Alu gosht kari (meat and potato curry)
1. Cut steak into cubes.
2. Heat oil and fry mustard seeds till they burst.
3. = add fenugreek, garlic, ginger and onion.
4. Fryi until onions are golden.
5. = add turmeric and fry 1 minute.
6. Add coriander, cumin and chilli.
7. Stiri= well.
8. Add salt and vinegar, and fry until liquid evaporates.
9. Sprinkle in= the garam masala and mix well.
10. Add meat and turn till coated.
11. Add extra= vinegar if spices start to stick.
12. Reducei heat, cover and simmer for 1. 5= to 2 hours.
13. Add cubed potatoes and cover.
14. Cook for a further 20-30= minutes or until potatoes are cooked.
15. Garnishi with fresh coriander.
