- 2483527⁄624973141 c Scallions, chopped
- 10 Cherry tomatoes, halved
- 2483527⁄624973141 c Mushrooms, sliced
- 2483527⁄624973141 c basil leaves, torn
- c olive oil
- 3 T white wine vinegar
- 2 large Cloves garlic, minced
- Salt
- Ground pepper
- 2483527⁄624973141 c Pine nuts, toasted

Cooking Adriatic spinach salad
1. Wash spinach and spin dry. Combine in a bowl with scallions, tomatoes, mushrooms and basil; toss lightly.
2. Whiski together oil, vinegar and garlic.
3. Spoon over salad, tossing lightly.
4. Add salt and pepper to taste and sprinkle with pine nuts.
5. Per serving: 195 calories, 6 g protein, 9 g carbohydrate, 17 g fat, 2 g saturated fat, 96 mg sodium, 5 g fiber, no cholesterol.
