Acaca (steamed rice flour pudding)

Acaca (steamed rice flour pudding) ingredients
- 2 T Extra-virgin olive oil
- 1 1⁄3 c Fresh or canned unsweetened Coconut milk
- 1 c Milk
- Salt and freshly ground
- white pepper
- 1 1⁄2 c Rice flour (available at Latin American , and specialty food stores)
- 1⁄3 c Heavy Cream
Cooking Acaca (steamed rice flour pudding)
1. In a large saucepan, mix together the olive oil, coconut milk, milk, and salt and pepper and bring to a simmer over high heat.
2. Reducei the heat to medium and whisk in the rice flour a little at a time , stirring constantly until the mixture is smooth and thick, about 8 minutes.
3. Gradually add the cream, mix and pour into a lightly oiled 8 by 8-inch shallow oven-proof pan. Cool, covered until ready to serve.
4. When the pudding is ready to serve, allow it to come to room temperature, if chilled for a long time.
5. Cut into small squares or diamond shapes and serve with the bobo.

I think something is missing. Why is the stuff poured into an oven-proof pan if it never comes anywhere near an oven? And why is it called \"steamed\" if there is no steaming step?

Acaca is not oven-baked at all! The name "steamed rice flour pudding" is simply wrong and misleading! It's just rice flour pudding!
It doesn't have to be poored into an oven-proof pan either. A pyrex dish that has been rinsed with cold water is good! You just need someting where you can get the Acaca out of without messing it up. Even small bowls or tea cups would do...!
Some people serve it with bobo (shrimps) others don't! You don't even need salt and pepper! This is a VERY versatile dish that tastes great just with a nice chocolate or caramel sauce! It's a pudding after all!!!!
