A Gahntze Tzimmes ingredients

  • 3 lb boneless brisket, up to 4 pounds
  • 2 T schmaltz, (rendered chicken fat)
  • 3 T Carrots
  • 2 lb prunes, pitted
  • 2 lb Dried Apricots
  • 1 Lemon, thinly sliced
  • 3 T sweet potatoes
  • 1 Orange, Juice of
  • 5 c Boiling water
  • 2 T Brown sugar
  • 2 T flour

Cooking A Gahntze Tzimmes

1. Seari meat well in hot fat in a Dutch oveni or heavy skillet on top of the
stove.
2. Transfer to a roasting pan. Peeli carrots and cut in 1-inch round
slices.
3. Place them around the meat.
4. Add prunes, apricots and lemon slices.
5. Peel sweet potatoes and cut in 1-inch slices.
6. Place over meat and fruit in
the roaster.
7. Add orange juice to boiling water.
8. Combine brown sugar and flour and add
enough water to make a thin paste.
9. Add this paste to the orange juice
mixture.
10. Pour over the Tzimmesi.
11. If necessary, add more boiling water to
bring liquid to the top of the tzimmes.
12. Cover.
13. Bakei at 400 degrees for 1
hour.
14. Reducei heat to 325 F. and continue baking 4 1/2 hours.
15. Uncover and
bake 30 minutes longer.
